  • 6 eggs
  • 1/2 cauliflower
  • 1 red bell pepper
  • 1/4 pounds mushrooms
  • 1/2 cup cheese (Gruyere or Swiss)
  • 1/2 cup half & half
  • chives
  • salt and pepper
  • 2 tablespoons olive oil
  • 1 9-inch frozen pie crust pastry

Step 1

1: Preheat oven to 350°F. In a large bowl, toss cauliflower florets, sliced red bell pepper and mushrooms with olive oil, salt and pepper. Bake for 30 minutes. Set aside.

2: Preheat oven to 350°F again. Whisk eggs, cream and salt together. Pour the mixture into the pie crust. Add the vegetables, fresh chives and cheese on top. Bake for 45-60 minutes or until a knife test in the center of the quiche comes out clean. Remove quiche to cooling tray and rest for 5 minutes.

Serve quickly while the cheese is still gooey.
