This is my mother's macaroni salad recipe. She used the same ingredients and substituted potatoes for the noodles, added peas or bacon. It is truly a versatile mix, that is a family favorite.

  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green pepper
  • 1 dash pepper
  • 1 teaspoon salt
  • 1 tablespoon yellow mustard
  • 2 tablespoons sugar
  • 1 tablespoon white vinegar
  • 3 cups dry elbow noodles
  • 1 cup mayonnaise

Step 1

Boil elbow noodles in salted water until al dente. Cool the cooked noodles with cold water and drain well.

In a small bowl, combine mayonnaise, white vinegar, yellow mustard, sugar, salt, and pepper. Stir until well combined.

Add chopped onion, celery, and green pepper to the mayonnaise mixture and stir well to combine.

Pour the mayonnaise-vegetable mixture over the cooled and drained elbow noodles in a large bowl and stir well to coat all ingredients.

Chill the macaroni salad thoroughly before serving.
