  • 2 cup unsweetened coconut flakes
  • 2 egg whites
  • 1 teaspoon coconut extract
  • 1 cup confectioners' sugar
  • 2 ounce semisweet chocolate

Preheat oven to 350 degrees.

In a bowl, mix together coconut, egg whites, and coconut extract. With a mixer on low speed, feed in the confectioners' sugar. Form the mixture into balls and line them up on a nonstick or parchment-lined cookie sheet.

15 minutes

Bake for 15 minutes, or until browned on the outside. Let cool. Melt chocolate in a double boiler. Drizzle over macaroons with a slotted spoon.
