  • 8 tablespoons Water
  • 4 tablespoons Olive oil
  • 2 cloves Garlic, coarsely chopped
  • 1 Lemon Lemon
  • 2 Artichokes Artichokes, fresh
  • Salt(optional)
  • Pepper(optional)

Instructions

Step 1

Trim the stems and spiny tips off the artichokes, slice them in half lengthwise, and rinse well under running water. Scrape out the choke.

Using half a lemon for each artichoke, squeeze the lemon juice over all the cut sides of the artichokes.

Using thick, heavy-duty aluminum foil, make baking cups large enough to hold each artichoke half. Place an artichoke half in each cup, cut side up, sprinkle with garlic and a drizzle of olive oil over each one. Season with salt and pepper. Add 2 tablespoons of water to each half and cover the artichoke halves with foil.

1 hour or until tender

On a closed grill over medium-hot coals, grill the artichoke halves for 1 hour or until tender when pierced.
