- 1.5 teaspoons sugar
- 1.5 teaspoons instant espresso powder
- 1 tablespoons finely chopped toasted almonds
- 1 teaspoons almond extract
- 1.5 tablespoons butter
- 2 tablespoons butter
- 2 tablespoons chopped bittersweet chocolate
- 3 eggs
- 1/2 vanilla bean, split and scraped
- 2 cups milk
- 3 tablespoons sugar
- 2 tablespoons all-purpose flour
Instructions
Step 1
Mix the 2 tablespoons all-purpose flour and 3 tablespoons sugar together.
Step 2
Heat the 2 cups milk and 1/2 vanilla bean (split and scraped) to scalding in a heavy saucepan.
Step 3
Add 1/2 cup of the hot milk from the saucepan to the flour and sugar mixture, beating until smooth.
Step 4
Return the smooth flour, sugar, and milk mixture to the saucepan with the remaining hot milk.
Step 5
Lightly beat the 3 eggs. Temper the eggs by gradually adding 1/2 cup of the hot milk mixture to them, beating well.
Step 6
Return the tempered eggs to the remaining milk mixture in the saucepan and cook over medium heat until the mixture reaches the consistency of thickened pudding.
Step 7
Remove from heat, then add the 2 tablespoons butter.
