  • 150 gram minced lamb
  • 1/2 unit onion or shallots
  • 2 handfuls chopped coriander
  • 2 cloves garlic
  • 4 centimeter ginger or pinch of dried ginger
  • 2 pinches Cayenne pepper
  • 1 teaspoon ground cumin
  • 200 gram Passata or chopped tomatoes
  • olive oil
  • salt
  • pepper
  • chopped coriander or parsley(optional)

Step 1

Combine the minced lamb, 1/4 onion/shallots, 1 handful of chopped coriander, 1 garlic clove, 2cm ginger/pinch of dried ginger, small pinch of Cayenne pepper, and 1/2 teaspoon of ground cumin. Shape the mixture into small balls.

Step 2

To make the sauce, sweat off the remaining 1/4 chopped onion/shallots in a little olive oil. Add the remaining 1 garlic clove, 2cm ginger/pinch of dried ginger, small pinch of Cayenne pepper, and 1/2 teaspoon of ground cumin. Then, add the Passata or chopped tomatoes and stir.

15-20 minutes

Add the lamb koftas into the sauce along with the remaining 1 handful of chopped coriander and cook for 15-20 minutes.

Season with salt and pepper to taste. Garnish with a sprinkle of chopped coriander or parsley. Serve as canapes on cocktail sticks or as a main course with rice or salad.
