Almost Heaven Cake
This is a wonderful dessert- moist, juicy cake from the pineapple juice, the thin pudding/cream cheese layer adds a special flavor, and the cool whip topping and oranges add a light but refreshing flavor. All in all, this is about my favorite cake! It is wonderful for large gatherings. It is not the most elegant-looking dessert, but it will certainly bring much appreciation when they take the first bite. Another added bonus is that this recipe is another cake mix-made special (my kind of easy).

- 1 box yellow cake mix
- 2 cans mandarin oranges (15 oz each)
- 1 can crushed pineapple (20 oz.)
- 1 box instant vanilla pudding (4 serving size)
- 0.5 cup cold milk
- 0.5 cup slightly warmed milk
- 8 ounces cream cheese, softened completely
- 8 ounces Cool Whip
Instructions
Step 1
Prepare the cake mix as directed on the package.
Step 2
Add in one drained can of mandarin oranges as you mix the cake. The oranges will be blended into small pieces.
Step 3
Bake in a 9x13 inch prepared oblong cake pan.
Step 4
After baking, while the cake is still warm, poke holes in the cake over the entire surface using a fork.
Step 5
Pour the undrained crushed pineapple over the hot cake.
Step 6
Spread the pineapple evenly over the surface of the cake.
Step 7
Allow the cake to cool.
Step 8
Mix cream cheese with the pudding mix and 1/2 cup warm milk.
Step 9
After mixing together well, gradually add the cold milk while continuing to mix until well blended (easiest with an electric mixer).
Step 10
Place the cream cheese mixture in the refrigerator for about 1 hour or more until it is more firm.
Step 11
Remove the mixture and spread it over the top of the cake.
Step 12
Spread the Cool Whip over the cake.
Step 13
Drain the second can of mandarin oranges.
Step 14
Arrange the orange pieces over the top of the Cool Whip in rows or another type of pretty design.
Step 15
Cover and refrigerate for at least another 1-2 hours before serving.

Store covered in the refrigerator.
