Italian Lentils & Rice

Ingredients

1 cup raw rice
2 tablespoons olive oil
2 bay leaves
1 teaspoon oregano
Salt or Spike or Mrs. Dash Seasoning

Preparation

Boil lentils in salted water to just cover until tender.

Cook 1 cup raw rice separately in the meantime.

Then combine lentils and rice with olive oil, bay leaves, and oregano.

Add 1 ½ cups canned Italian plum tomatoes with basil.

Simmer about ½ hour.

Check seasoning and add salt or other to taste.

Serve hot as a vegetarian supper dish.

Yield:

2.0 as main dish.
