  • 225 gram milk chocolate, chopped
  • 120 gram butter, cut into pieces
  • 2 tablespoons cocoa powder
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 3 eggs eggs, room temperature
  • 2/3 cup plain flour (95 g)
  • 1/4 teaspoon salt
  • 1/4 cup mixed dried fruits
  • 415 gram canned stoneless black cherries in syrup
  • 500 gram unsweetened frozen mixed berries
  • 1 cup castor sugar(optional)
  • 1 tablespoons cornstarch
  • 1 teaspoon salt
  • 1/8 teaspoon vanilla extract
  • 1.5 tablespoons lemon juice(optional)
  • 1.5 cups thickened cream
  • 1.5 tablespoons castor sugar
  • 1/4 teaspoon vanilla extract
  • crumbed brownies
  • crushed cereal
  • black cherry

Instructions

Step 1

Preheat oven to 180 degrees Celsius. Grease and line a 20cm square pan with baking paper.

Melt the chocolate pieces and butter in a large stainless steel bowl placed over a saucepan with simmering water.

Once the chocolate and butter have melted, remove from heat and stir in cocoa powder and sugar.

Next, whisk in vanilla extract and eggs, one at a time, beating well after each addition.

Then, stir in flour, salt, and mixed dried fruits.

Pour into the prepared pan and bake for about 30 minutes or until a tester inserted in the center comes out with a few crumbs attached.

Remove from oven and let it cool on a wire rack. Cut brownies into desired size to fit into a trifle glass or bowl.

Drain the juice from the canned stoneless black cherries.

Mix the drained cherries into the puree, saving some remaining cherries for topping or garnish.

Thaw the frozen mixed berries in a large fine meshed strainer suspended over a medium size saucepan. Once completely thawed, gently press the berries with the back of a spoon to force the juice out. All that should remain in the strainer is the mixed berries seeds.

Throw away the seeds.

To the strained juice, add castor sugar, cornstarch, salt, vanilla extract, and lemon juice. Stir until smooth. Place saucepan over medium heat. Cook until the sauce thickens. Add more sugar as needed. Remove from heat and add the drained stoneless black cherries.

Whip the cream until soft peaks form. Add the sugar and vanilla extract, continue to whip until stiff peaks form.

To assemble the Black Forest Trifle: Place a handful of bite-sized brownie pieces in the bottom of each individual trifle glass.

Next, spoon about 2 teaspoons of mixed berries puree on the brownies.

Then, place 2-3 or more of the cherries mixed into the puree on top.

For the next layer, place a large dollop of whipped cream.

Repeat the layers starting with brownies.

Cover with cling wrap and refrigerate for at least 4 hours to 24 hours to allow the flavors to mingle.

Before serving, sprinkle some crumbed brownies, crushed cereal, and place a black cherry on top.
