Kibbeh or Kubbeh is basically cracked wheat mixed with ground meat or certain vegetables and then formed into balls stuffed with ground meat mix or other vegetables. Kubbeh is a famous dish in the Lavant region but the most famous kitchen for making many varieties of it is the Syrian kitchen.

  • 1 Cup bulgur
  • 1 Cup water
  • 0.5 kilogram ground meat (beef or lamb)
  • 2 Medium onions
  • salt
  • black pepper
  • allspice
  • cinnamon
  • cardamom

Instructions

Step 1

15-30 minutes

Soak the bulgur in water.

Add the meat to the soaked bulgur and mix well with the spices.

In a food processor, combine the bulgur and meat mix and grind well.

Add the onions to the food processor and continue to grind until a uniform kebbeh dough forms.

Form the kebbeh dough into rolls and stuff them with cooked ground meat.

Fry the stuffed kebbeh rolls.
