  • 2 tablespoons margarine, melted
  • 1 cup brown sugar, firmly packed
  • 1 cup applesauce
  • 1 egg
  • 1 cup flour
  • 1 tablespoon Calumet Baking Powder
  • 1 teaspoon salt
  • 2 cups Post Fruit & Fibre Cereal
  • 1 cup fat free milk

Heat oven to 400 degrees F (200 degrees C). Spray a muffin pan with no-stick cooking spray.

In a large bowl, mix flour, baking powder, and salt. In a separate bowl, mix cereal and milk; let stand for 3 minutes.

In a small bowl, beat the egg, then stir in applesauce, sugar, and melted margarine. Stir this mixture into the cereal mixture. Add the combined wet ingredients to the flour mixture and stir just until moistened. The batter will be lumpy.

20 minutes

Spoon the batter into the prepared muffin pan, filling each cup two-thirds full. Bake for 20 minutes or until golden brown. Serve warm.
