Black Bean Salad {my Way}

BeginnerEveryday I try to come up with new ideas to incorporate vegetables into our meals. I spent a year as a vegetarian while living in Kenya but still struggle when thinking what to make for lunch and supper so that it is healthy and we all enjoy it. This is a simple meal by itself and very easy to make. I always have beans at home because where I come from it is a staple food.

- 1 1/2 cup cooked black beans
- 1 1/2 cup corn
- 1/2 cup white or red onion
- 1/2 pickled jalapeño pepper, minced
- 4 fresh Roma tomatoes, chopped
- 1 medium avocado, peeled, seeded and cut into chunks
- 1/3 cup chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1/4 cup extra virgin olive oil
- Salt and pepper

Step 1
In a large bowl, combine all the ingredients. Add salt and pepper to taste. Chill a bit before serving.
