Step 1

Select firm, well-ripened crab-apples. Wash them thoroughly. Do not pare or remove their stems.

Remove the blossom ends from the crab-apples. Prick their skins to prevent the fruit from bursting during cooking. Cook slowly in a pickling sirup, similar to that used for pickled peaches, until the crab-apples are tender.
