I ordered a BOBOTIE, a well known South-African dish for the first time at Pilgrim's Rest in the Eastern Transvaal. A little village whose name was given by the gold seekers on their route to discovery, a route often crossed by disappointed dreams....

  • 3 eggs
  • curry leaves
  • 12 almonds
  • lemon juice
  • 15 ml apricot jam
  • 15 g curry powder
  • 30 ml cooking oil
  • 2 onions
  • 375 ml milk
  • 1 slice white bread
  • 1 kg minced pork
  • salt(optional)
  • pepper(optional)

Instructions

Step 1

Soak the slice of white bread in some of the milk.

Heat the cooking oil in a skillet and sauté the finely chopped onions until softened.

Add the curry powder to the sautéed onions and cook for a short period, stirring constantly.

Add the minced pork, the soaked bread (squeezed to remove excess milk), crushed almonds, lemon juice (or vinegar), apricot jam (or sugar), salt, and pepper to the skillet.

Stir the meat mixture thoroughly with a fork until well combined.

Spoon the mixture into a greased baking dish.

Place curry leaves on top of the meat mixture.

Bake the bobotie at 160°C for 45 minutes.

While the bobotie bakes, prepare the topping: in a mixing bowl, combine the beaten eggs and the remaining milk by beating thoroughly.

15 minutes

After the initial baking, pour the egg and milk topping over the partially baked bobotie and return to the oven to bake for a further 15 minutes.

Serve the South African Bobotie with yellow rice.
