Braised Chicken Thigh 卤鸡腿


1 kg Chicken Thigh or whole chicken, chop to pieces
1/2 teaspoon Salt
1/2 teaspoon Sugar
1/2 tablespoon Light soy sauce
1/2 tablespoon Dark soy sauce
1 tablespoon Sesame oil
1/2 tablespoon Ginger juice
1/2 tablespoon Cooking wine - Hua Tiao Chiew
Marinate the chicken thigh together with the seasoning overnight
3 tablespoons Sesame oil
20 grams Ginger - shredded
2 tablespoons Dark soy sauce
1 tablespoon corn flour + 2 tbsp water as thickening


Heat up 3 tbsp sesame oil in wok and saute shredded ginger until fragrant.
Add in chicken thigh together with the sauce with extra 2 tbsp dark soy sauce and stir fry until aromatic.
Add in 300ml water, boil and lower heat~cover~simmer for about 25-30 minutes.
Lastly thicken with corn flour water and serve.
