- 1 pint grape tomatoes
- 1 1/2 cups whole milk
- 1 1/2 cups sharp cheddar cheese, shredded
- 3 tablespoons butter
- 1 box macaroni
- Romano cheese, about 2 inch wedge
- 1 teaspoon capers
- 1 tablespoon caper marinade
- 6 ounce anchovies, can
- 3 sun-dried tomatoes
- 1/2 cup Italian style bread crumbs
- parsley, healthy handful
- 1 tablespoon vinegar
- 1/2 jalapeño, with seeds
- olive oil, drizzle
- shredded cheddar cheese, for topping
Instructions
Step 1
Prepare the macaroni according to package directions.
Step 2
Place the grape tomatoes in a food processor and pulse a few times until roughly chopped.
Step 3
Transfer the cooked macaroni to a baking dish. Add the butter, 1 1/2 cups shredded sharp cheddar cheese, whole milk, and chopped grape tomatoes.
Step 4
Add the Romano cheese (about 2 inch wedge), capers, caper marinade, canned anchovies, sun-dried tomatoes, Italian style bread crumbs, parsley, vinegar, jalapeño (with seeds), and a drizzle of olive oil to the food processor. Process until fine.
Step 5
Add the finely processed mixture from the food processor to the baking dish with the macaroni mixture and toss to combine. Top with additional shredded cheddar cheese.
Step 6
Preheat oven to 350 degrees F (175 C). Bake for 20-25 minutes.
