  • 3 tablespoons Vegetable Oil
  • 3/4 cup Dry Bread Crumbs
  • 2/3 dash Black Pepper
  • 1/4 teaspoon Dried Rosemary, Crushed
  • 1/2 teaspoon Salt
  • 1 Egg
  • 2 tablespoons Water
  • 12 ounces Pork tenderloin

Cut the pork tenderloin in half lengthwise, but do not cut all the way through.

Open and flatten the tenderloin on a cutting board. Pound it with a meat mallet to 1/4 inch thickness. Cut it into three pieces. In a bowl, beat the egg, water, salt, crushed rosemary, and pepper with a fork. Dip each piece of meat in the egg mixture, then in the bread crumbs, and repeat for a double coating. Heat oil in a skillet over medium-high heat. Cook the meat until browned and tender, turning once.
