- 4 oz feta cheese, crumbled
- 1 package frozen spinach (16 oz)
- 1 can chickpeas, drained (29 oz)
- 1 onion small red onion, sliced
- 4 cloves garlic, chopped
- 4 pieces sun dried tomatoes, sliced
- 1/2 lemon lemon, juiced
- to taste salt(optional)
- dashes red pepper flakes
- for drizzling olive oil
Instructions
Step 1
Heat a large frying pan with a drizzle of olive oil. Carefully add the frozen spinach and allow it to slowly thaw.
Step 2
Once the spinach is completely thawed, add the chopped garlic, sun dried tomatoes, and sliced onion to the pan and sauté until the onion is slightly soft. Add salt, red pepper flakes, and lemon juice to taste.
Step 3
Prepare the spaghetti according to package directions. Add a few tablespoons of the hot pasta water to the frying pan with the spinach mixture.
Step 4
Add the drained chickpeas to the frying pan and toss to combine.
Step 5
Add the cooked spaghetti, crumbled feta cheese, a few drizzles of olive oil, and another dash of red pepper flakes to the pan. Toss everything together to combine.
