- 1 nine-inch pie shell
- 1 tablespoon olive oil
- 2 white onions, sliced finely
- 3 cloves of garlic, sliced finely
- 1/2 teaspoon dried chilli flakes
- 1 box mushrooms, sliced thick
- 1 teaspoon thyme, dried
- 2 eggs
- 3/4 cup half and half cream
- 100 gram Havarti cheese, grated
- salt and pepper(optional)
Instructions
Step 1
Heat the oven to 400°F. Dock the pie shell with a fork and bake for 10 to 15 minutes until lightly golden.
Step 2
In the meantime, heat the olive oil. Add the onions along with the garlic and chilli flakes and cook on high until the onion caramelise.
Step 3
Now add the mushrooms and continue to cook on high so the mushrooms caramelise as well. Take off the fire, add the thyme and salt and pepper to taste.
Step 4
Beat the eggs in a large bowl with the cream and half the quantity of cheese. Add the onion-mushroom mixture and mix well.
Step 5
Place the pie shell on a cookie tray to catch any spillage. Pour the filling into the pie shell. Top the quiche with the remaining cheese.
Step 6
Drop the temperature to 375°F and cook until the filling is set and golden. Serve when still warm from the oven.
