  • 1/4 cup shortening
  • 2 cups all purpose flour
  • salt and pepper(optional)
  • 2 1/2 pounds whole chicken, cut up
  • 2 tablespoons olive oil
  • 2 teaspoons garlic puree
  • 1 pinch baking powder
  • 1 large egg, well beaten

Mix together the egg, baking powder, garlic puree, and olive oil. Cut the chicken into serving pieces. Season the chicken with salt and pepper and add it to the egg mixture, allowing it to soak for several hours (even overnight).

Step 2

Using a china bowl, rework the liquid into the chicken before removing it from the bowl. Roll the chicken in flour that has been seasoned with salt and pepper (Lowry Seasoned Salt is very good here).

Heat shortening on low heat until very hot. Fry the chicken on low heat until done and browned (about 30 minutes).
