- 600 grams pumpkin, cleaned
- 2 tablespoons olive oil
- 120 grams feta cheese, crumbled
- 120 grams mozzarella, torn into small pieces
- 2 units eggs
- 2 teaspoons dried oregano
- 4 tablespoons parsley, chopped
- 4 cloves garlic, minced
Instructions
Step 1
Chop the pumpkin using a food processor until it resembles rice.
Step 2
Sauté the chopped pumpkin in hot olive oil. Set aside and let it cool completely.
Step 3
In a mixing bowl, combine the feta cheese and mozzarella. Add the eggs one at a time, mixing well after each addition until thoroughly combined.
Step 4
Add the cooled pumpkin, dried oregano, chopped parsley, and minced garlic to the cheese and egg mixture. Mix well until all ingredients are thoroughly blended.
Step 5
Evenly spoon the mixture into greased muffin tin molds. Press pizza dough down evenly and firmly into each mold (this is very important to ensure they stick together).
Step 6
Place the muffin tin in the oven and bake at 200˚C.
Step 7
Remove the pizza bites from the oven and let them set in their pan for 5-10 minutes before carefully removing. Allow to cool completely.
