  • 1/2 can chick peas/ garbanzo beans
  • 2 cup fresh brussel sprouts
  • 1 red pepper
  • 1 cup cooked white or brown rice(optional)
  • 1/2 cup virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • soy sauce(optional)

Slice the brussel sprouts.

Cut the red pepper into 1/4-inch pieces.

Heat the virgin olive oil in a skillet or pan over medium heat.

Add the sliced brussel sprouts, chick peas, kosher salt, black pepper, and cut red pepper to the heated oil. Sauté, stirring and flipping occasionally, until the brussel sprouts are a light golden brown on both sides.

Cook the white or brown rice according to package directions.

Serve the cooked vegetable mixture over the prepared rice. Add soy sauce for seasoning if desired.
