  • 4 small sweet potato, peeled and sliced into french fry sized slices
  • 2 inch medium zucchini, sliced french fry sized slices
  • 4 tablespoons rosemary, minced
  • 1 cup bread crumbs
  • 1 tablespoon lemon zest
  • 1 large egg whites
  • 2 tablespoons water
  • salt(optional)
  • pepper(optional)

Instructions

Step 1

Preheat oven to 400 degrees Fahrenheit.

Liberally spray a baking sheet with cooking spray.

In one bowl, whip the egg white with water. In another bowl, combine bread crumbs, lemon zest, rosemary, salt, and pepper.

Dip the sweet potato and zucchini slices in the egg mixture, then dredge them in the bread crumb mixture. Place the coated vegetables on the prepared baking sheet.

20-30 minutes

Bake for 20-30 minutes, until the fries are lightly browned and tender on the inside.
