- 4 pieces Apples
- 2 sheets pastry
- 4 tablespoons heaping pastry cream
- walnuts
- almond sprinkles
- raisins
- 150 grams sugar
Instructions
Step 1
Wash apples carefully. Place them in an oven-safe dish with half a glass of water and bake at 180°C for 25 minutes.
Step 2
Prepare the filling by mixing pastry cream with hydrated raisins and nuts (walnuts, almonds).
Step 3
Once the apples are baked, fill them with the prepared pastry cream, raisin, and nut mixture.
Step 4
Prepare the pastry prison. Form a ball of baking paper slightly larger than an apple. Using a grid cutter or a sharp knife, create a grid pattern on a pastry sheet.
Step 5
Cut the gridded pastry sheet into 4 pieces. Place each piece over a baking paper ball, as if creating a dome (referencing images).
Step 6
Bake the pastry grids for 15 minutes at 200°C. (Note: If the pastry dough is too thin for the cutter, you can knead and stretch it to your desired width.)

After baking, carefully remove the baking paper balls from inside the pastry grids.
Step 8
While the pastry is baking, prepare the caramel. Place sugar in a nonstick pan over medium heat and cook until it becomes liquid and darkens.

Once the pastry grids are baked, carefully cover them with hot caramel. Let them dry completely.
Step 10
To serve, place a baked apple on a dish, fill generously with the cream mixture, and cover with a caramel-coated pastry grid.
