- 4 cloves garlic
- 1 pint grape tomatoes
- 2 bunches scallions
- handful Italian parsley
- 1 jalapeño with seeds
- 29 ounce can crushed tomatoes
- 29 ounce can cannellini beans (drained and rinsed)
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon dried oregano
- dashes red pepper flakes
- 2 tablespoons vinegar
- 1 teaspoon brown sugar
- 4 ounces feta cheese (crumbled)
- olive oil
- 1 pound spaghetti
Instructions
Step 1
Combine the garlic, grape tomatoes, scallions, Italian parsley, and jalapeño (with seeds) in a food processor and pulse until coarsely chopped.
Step 2
Heat a large frying pan with a drizzle of olive oil. Add the chopped ingredients from the food processor and simmer on low for 10 minutes.
Step 3
Add the crushed tomatoes, dried oregano, salt, pepper, and drained and rinsed cannellini beans to the pan. Continue to simmer on low while cooking the spaghetti according to package directions.
Step 4
In a separate small bowl, combine the vinegar and brown sugar. Stir this mixture into the sauce.
Step 5
Arrange the cooked spaghetti on a platter. Top with the sauce, crumbled feta cheese, a few dashes of red pepper flakes, and a final drizzle of olive oil.
