  • 2/3 cup sugar
  • 1/4 teaspoon salt
  • 2 teaspoons vanilla
  • 1/4 cup coconut flour
  • 3 cups sweetened coconut flakes
  • 1 cup casein free chocolate chips
  • 1/2 cup SO Delicious coconut creamer
  • 3 teaspoons instant coffee(optional)

Preheat oven to 350 degrees.

Beat together egg whites, sugar, and salt until very frothy.

Stir in vanilla, coconut flour, and coconut flakes.

Roll the mixture into tablespoon-sized balls and drop onto a well-greased or parchment-lined baking sheet.

Bake for 10-15 minutes, or until tops are golden brown.
