Black Walnut Cake
This is a delicious family favorite. Feel free to leave out the black walnuts, but their natural sweetness and depth of flavor, makes it lovely.

- 2 cups beer
- 3 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoons allspice, cloves and salt
- 1 teaspoons cinnamon
- 1 cups black walnuts, chopped(optional)
- 1 cups lard
- 2 cups sugar
- 2 eggs
Instructions
Step 1
In a large mixing bowl, combine lard and sugar and beat until fluffy.
Step 2
Add eggs to the lard and sugar mixture, mixing well after each addition.
Step 3
In a separate medium mixing bowl, combine the dry ingredients: flour, baking powder, allspice, cloves, salt, and cinnamon.
Step 4
Alternate gradually adding the dry ingredients and beer to the lard, sugar, and egg mixture, mixing until just combined after each addition.
Step 5
If using, stir in the chopped black walnuts.
Step 6
Pour the batter into a 9x13 inch baking pan and bake at 350°F for 1 hour and 15 minutes.
