  • 1.0 pounds canned red salmon
  • 0.5 cup grated onion
  • matzo meal
  • 1.0 large egg
  • salt
  • pepper(optional)
  • horseradish
  • oil

Remove the skin and bones from the salmon and drain it thoroughly.

In a mixing bowl, combine the drained salmon, grated onion, large egg, and enough matzo meal to create a mixture that is easy to handle and shape.

Shape the mixture into small latkes.

Heat oil in a frying pan over medium-high heat. Fry the shaped latkes in the hot oil until golden brown and cooked through on both sides.

Serve the latkes warm with horseradish sauce.
