Lazy Lentils

Ingredients

175 grams (6 oz) red lentils
100 grams (3.5 oz) cheddar cheese, grated
5 mls (1 tsp) vegetable extract
5 mls (1 tsp) dried mixed herbs
10 mls (2 tsp) sunflower oil
2 mediums onions peeled and chopped
1 clove garlic crushed.
300 mls (1 cup) water

Preparation

Put the lentils, cheese, vegetable extract and mixed herbs into a bowl.

Heat the oil in a non-stick pan and gently fry the onions and garlic. Mix with the lentils and spoon into a large lightly-greased ovenproof dish.

Add the water and cover the dish with foil. Cook in the oven at 180 c/350 f/gas mark 4 for one and a half hours.
