The Ultimate Holiday Cookie
Note: this recipe was submitted by Rachel Schachter to the Four Seasons Hotel Seattle's Ultimate Holiday Cookie Contest. This is the perfect holiday cookie recipe. These cookies are quick and easy to make, and all of the ingredients are generally at hand. Warm from the oven, they are rich cookies that melt in your mouth. After they cool, they harden and become the ideal shortbread cookie to serve with coffee. The addition of cinnamon adds a unique flavor that recalls the holiday season.

- 0.5 pound unsalted butter (room temperature)
- 1.25 cup fine granulated sugar
- 0.5 teaspoon vanilla
- 2.0 eggs
- 0.75 cup cocoa powder
- 3.0 cup cake flour
- 2.5 teaspoon baking powder
- 0.25 teaspoon salt
- 1.0 dash cinnamon
Instructions
Step 1
Preheat oven to 350°F.
Step 2
Using an electric mixer, cream the butter and sugar. Add vanilla and eggs, beat until combined.
Step 3
In another bowl, whisk together the cocoa, flour, baking powder, salt, and cinnamon.
Step 4
Add the mixed dry ingredients to the butter mixture gradually, beating at a low speed.
Step 5
Divide the dough into two sections and roll into logs. Slice into even rounds about 1/3 inch thick and bake on parchment paper for about 10 minutes. Remove from oven and let cool.
