2 tsp. light butter
1 tsp. chopped chives
1 Tbsp. chopped green pepper
Dash of Tabasco
1 Tbsp. chopped celery
¼ cup crabmeat
2 strips pimento (optional)
One 2-egg omelet (1 tsp. water, salt and pepper, 2 tsp. herbs)
Melt butter in a small skillet and lightly sauté green pepper and celery until just tender.
Mix with remaining ingredients. (Substitute cooked lobster or shrimp, too.)
Fill the omelet, top with pimento.
