Fabulous Coconut Bars
A tasty alternative to the standard cookie bar, these originally called for Crisco(eww), and Lard seemed to have too much flavor. I like using coconut oil instead. Enjoy!

- 1/2 cup coconut oil
- 1/2 teaspoons salt
- 1/2 cup brown sugar
- 1 cup flour
- 1 cup brown sugar
- 1 teaspoons vanilla extract
- 2 eggs, beaten
- 2 tablespoons flour
- 1/2 teaspoons baking powder
- 1 cup chopped walnuts
- 1 1/2 cups shredded coconut
Instructions
Step 1
In a mixing bowl, blend together the 1/2 cup coconut oil, 1/2 teaspoon salt, and 1/2 cup brown sugar.
Step 2
Add 1 cup flour to the blended mixture and mix until just combined to form the crust.
Step 3
Press the crust mixture evenly into the bottom of a 9x13 inch baking pan. Bake in a preheated oven at 325°F for 20 minutes.
Step 4
While the crust bakes, combine the remaining ingredients (1 cup brown sugar, 1 teaspoon vanilla extract, 2 beaten eggs, 2 tablespoons flour, 1/2 teaspoon baking powder, 1 cup chopped walnuts, and 1 1/2 cups shredded coconut) in a saucepan. Warm the mixture over low heat, stirring occasionally, just enough to make it easy to spread.
Step 5
Spread the warmed coconut-walnut mixture evenly over the warm crust. Return to the oven and bake at 325°F for an additional 25 minutes.
