Griddled Trout With Herbs

  • black pepper
  • 6 leaves fresh sage
  • 2 teaspoons coarse sea salt
  • 6 teaspoons fresh thyme leaves
  • 18 leaves fresh mint
  • 75 grams soft butter
  • 2 sprigs fresh rosemary
  • 1-2 sprigs dried rosemary(optional)
  • 6 fresh cleaned trout

Instructions

Step 1

Insert one sprig of fresh rosemary (or a generous shake of dried rosemary) into the middle of each fish. Chop the remaining fresh herbs (sage, thyme, mint) and seasonings (salt, pepper). Mash the chopped herbs and seasonings into the soft butter until well combined. Generously coat each side of the trout with the herbed butter mixture.

Step 2

4-5 minutes per side

Griddle, barbecue, or grill the fish for 4-5 minutes on each side, or until the skin is well browned and the flesh flakes easily from the bone. Baste occasionally with any butter that runs off during cooking.
