- 1 unit fresh ham
- 2 tablespoons red pepper
- 6 tablespoons black pepper
- 1/2 box brown sugar
- 2 cups salt

Mix together the red pepper, black pepper, brown sugar, and salt. Rub this mixture onto the skin side of the fresh ham first. Turn the ham over onto an open sack, and pack the mixture all over the ham, ensuring to pack around the shank bone.

Roll the ham up in the opened sack. Lace twine across the ham, then wrap it in brown paper. Tie up the entire package securely with twine. Hang the ham shank down in the sack.
