- 1 egg
- 1 cup pancake mix

Mix egg, 1 cup pancake mix, and 7-Up together well in a mixing bowl to form the batter.

Coat thin fish fillets with additional pancake mix, shaking both in a plastic bag.

Dip the coated fish fillets into the prepared batter mixture. Chill for about 20 minutes.

Heat oil in a deep fryer to approximately 400 degrees F.

Remove chilled, batter-dipped fish fillets one at a time and deep fry for 4 to 6 minutes.
