- pappardelle(optional)
- 3 chicken legs with thighs
- 110 grams bacon
- 1 large carrot
- 2 stalks celery
- 2 small onions
- 1 can diced tomatoes (14 oz)
- 1 cup water
- 2 chicken bouillon cubes
- 2 tablespoons butter
- dried basil
- salt and pepper
Instructions
Step 1
Finely chop the carrot, celery, onions, and bacon using a food processor or by hand. Grate or mince the garlic. Heat the butter in a large pot or Dutch oven and cook the bacon and chopped vegetables for about 5 minutes.
Step 2
Add the garlic and crumble in the chicken bouillon cubes. Cook for an additional minute, then add the chicken legs with thighs.
Step 3
Pour in the water and diced tomatoes. Season with salt, pepper, and dried basil to taste.
Step 4
Cover the pot with a lid and simmer for 45 minutes.
Step 5
Remove the lid and continue to simmer for another 15 minutes.
Step 6
Carefully remove the chicken from the pot. Once cool enough, pick the meat off the bones and shred or chop it, then return the chicken meat to the sauce.
Step 7
While the chicken is being processed, cook the pappardelle (or fettuccine) according to the package instructions.
