Cod Fillet In Lemon Grass Shallot Sauce
Lemon grass is one of my favorite spices. This one goes so well with fish. This is my Mum’s recipe and she used to make it the Chinese way but I told her I want her Lemon grass shallots sauce to go with grill Cod and serve as a Western dish and it turned out to be awesome

- 2 pieces cod fillet (200 g each)
- 1 tablespoons vegetable oil
- 1 teaspoons oyster sauce
- 0.5 cube chicken stock bouillon
- 2 teaspoons sugar
- 2 stalks lemon grass
- 10 shallots shallots
- 6 cloves garlic
Instructions
Step 1
Dice lemon grass, slice shallots and garlic and pound until very fine in a mortar and pestle. Add oyster sauce, chicken stock, and sugar and mix well. Scoop up 1 tablespoon of this mixture to marinate the cod fillet. Heat a sauce pan with oil, add the balance of the mixture, and sauté until fragrant. Turn off the heat and set the pan aside.
Step 2
Marinate the cod fillet with the 1 tablespoon of uncooked sauce mixture for 30 to 40 minutes, uncovered at room temperature. Spray a light coat of vegetable oil onto the grill pan. Heat the grill pan and place the cod fillets on the pan. Cook the fish for 3 minutes on each side or until lightly brown. Check the center of the fish for doneness; the color should be barely opaque. Remove the fish from the grill pan and transfer to a serving plate. Heat up the cooked sauce mixture in the sauce pan and pour onto the cod fillets and serve immediately.
