This recipe is a traditional one from Konya, Turkey normally served for breakfast but is good with a salad for a light lunch or dinner.

  • 6 diced zucchinis
  • 1 finely chopped onion
  • 4 beaten eggs
  • salt
  • pepper
  • chili
  • oil

Instructions

Step 1

10 minutes

In a fry pan, sauté the onion until soft. Then add the diced zucchini and cook for a further 10 minutes or until the zucchini is soft.

4 minutes

Reduce the heat to moderate and add in the beaten eggs, stirring into the zucchinis. Add salt, pepper, and chili. Cook for a further 4 minutes.

Step 3

Serve this for breakfast or with salad as a light meal.
