- 16 ounces pink salmon
- 2 eggs
- 1/4 cup parsley flakes (fresh or dried)
- 2 tablespoons scallions
- 1/4 cup Italian bread crumbs
- 1/2 lemon lemon juice
- red pepper flakes(optional)
- 2 tablespoons mayonnaise(optional)
- 1 tablespoons lemon juice(optional)

Step 1
Remove the skin from the pink salmon and crush any bones with your thumb and index finger, leaving them in for added calcium.

In a mixing bowl, knead together the prepped salmon with eggs, parsley flakes, scallions, Italian bread crumbs, lemon juice, and red pepper flakes.

Lightly oil a cast-iron pan and heat over medium heat. Cook the salmon patties until golden brown.

Serve warm with tarter sauce or an easy homemade sauce made by mixing mayonnaise and lemon juice.
