- 4 cups eggs
- 1 egg substitute(optional)
- 2 tablespoons extra virgin olive oil
- to taste salt(optional)
- to taste pepper(optional)
- 1 small baking potato, chopped
- 1 medium new potato, chopped(optional)
- 1/4 red onion, chopped
- 1/2 yellow bell pepper, chopped
- 1 zucchini, chopped
- 2 tomatoes, chopped
- 1/4 cup grated hard cheese
- 4 slices turkey bacon, chopped
Instructions
Step 1
Preheat oven to 350°F.
Step 2
Heat a large non-stick, oven-safe saute pan over medium-high heat.
Step 3
Add olive oil and chopped potatoes to the pan. Season with salt and pepper and saute until the potatoes become translucent.
Step 4
Add chopped vegetables and turkey bacon to the pan and saute until soft.
Step 5
While vegetables saute, whisk eggs with salt, pepper, and milk (if desired) in a separate bowl until scrambled.
Step 6
Pour the scrambled eggs over the vegetables in the pan, gently tilting the pan to ensure even coating.
Step 7
Sprinkle grated cheese over the top of the frittata mixture.
Step 8
Cook on the stovetop for 5 minutes over low heat.
Step 9
Transfer the pan to the preheated oven and cook for an additional 10 minutes.
Step 10
Remove from oven and serve immediately.
