  • 1 cup vegetable oil
  • 4 eggs
  • 20 ounce frozen blackberries
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3 teaspoon cinnamon
  • 2 cup sugar
  • 3 cup all-purpose flour
  • 1/4 cup milk(optional)

Preheat oven to 350F.

In a large mixing bowl, combine flour, sugar, cinnamon, baking soda, and salt.

Mash the blackberries well, reserving any juice.

Add eggs and vegetable oil to the mashed blackberries.

Combine the blackberry mixture with the flour mixture and mix well.

If the batter appears too dry, add the reserved juice from the blackberries or 1/4 cup milk until desired consistency is reached.

Pour the batter into 2 greased loaf pans.
