Simple Homemade Deep-Dish Pepperoni Pan Pizza

Ingredients

For the Dough
1/2 cup olive oil divided
3/4 cup + 2 Tbsp skim milk heated to 110°F
2 tsp sugar
2 1/3 cup all-purpose flour
1 package fast rising yeast 2 1/4 tsp
1/2 tsp salt
For the Sauce
1- 28 oz can crushed tomatoes
1 Tbsp olive oil
1/4 tsp garlic powder
1/4 tsp each salt and pepper
For the Toppings
3 cups shredded mozzarella cheese
3.5 oz sliced pepperoni

Preparation

emove one rack from oven and adjust remaining rack to lowest position. Preheat the oven to 200°F. When the oven reaches temp, turn off. You need two 9" round cake pans for the recipe. Coat each pan with 3 Tbsp olive oil. Heat the milk in the microwave in two 30 second intervals, stirring in between. Add the sugar and remaining 2 Tbsp olive oil to the milk and stir. In the bowl of a stand mixer with the dough hook attacked, mix the flour, yeast and salt. On low, slowly add the milk mixture. Turn the speed up to med-low and mix for about 5 minutes. Spray a large bowl with cooking spray, place the dough inside, and cover tightly with plastic wrap. Place the bowl in the preheated oven and allow dough to rise about 30 minutes.

In a medium saucepan, add the olive oil, crushed tomatoes, garlic powder, salt and pepper. Heat and stir occasionally over medium heat for about 10 minutes. Cover and remove from heat until time to assemble pizzas.

Line a microwave-safe plate with two layers paper towels. Place the pepperoni in a single layer and cover with two more layers of paper towels. Microwave for 30 seconds. Repeat with remaining pepperoni.

Remove the dough from the oven and turn out onto a lightly floured surface. Divide in two. Working with one half at a time, use a rolling pin to roll it into a 7" disc. Use your hands to gently tug the dough into a 9" disc and place carefully into the oiled cake pan. Be careful to keep most of the oil under the dough. Repeat with the other half of the dough. Cover both pans with plastic wrap and place in a warm spot. Allow the dough to rise for another 20 minutes.

Replace removed oven rack to middle position. Preheat the oven to 400°F. Spread 2/3 cup sauce onto each pizza, followed by 1.5 cups cheese and half the pepperoni. Bake pizzas for about 20 minutes, until cheese is melted and crust is golden. Allow the pizzas to rest one minute before slicing. Enjoy!
