Lightened Up Apple Oatmeal Muffins

Ingredients

1 1/4 teaspoons baking power
1/2 teaspoon salt
3/4 cup oatmeal
1/2 cup sugar
1/2 teaspoon pumkin pie spice or nutmeg
1 large egg slightly beaten
1/2 cup diced apples
cup applesauce
1/2 cup Vanilla soy milk (or regular milk)

Preparation

Sift together the flour, salt, pumpkin pie spice, and baking powder into a large bowl. Add the sugar and oatmeal and stir to combine.

In a separate bowl, lightly beat the egg and add soy milk, applesauce, and the diced apples. Stir to combine.

Add the egg mixture all at once to the flour mixture and stir until just blended.

Fill 12 muffin tins 2/3 full and bake until golden brown.

If you really want to go old school.... roll the tops of the warm muffins in melted butter and dip in cinnamon sugar. You gotta love those old ladies league cookbooks!
