Simple Summer Spinach Salad
I had this fabulous spinach salad while working in Brisbane, Australia. I couldn't get enough of this salad and the light flavor of the white balsamic vinaigrette made it so refreshing, that I had to recreate the recipe when I got back home to the USA.

- 3 ears - <a href="/PX527Z8L">fresh corn </a>(cooked) *
- 0.5 medium red <a href="/YCPMHNRB">onion </a>- finely diced
- 0.5 cup <a href="/CX8CMQHZ">Cashews </a>(halves & pieces)
- 4 ounce <a href="/4ML2TC4D">feta cheese </a>- cubed or crumbled
- 3 tablespoon white <a href="/23HWFLXY">balsamic vinegar</a>
- 0.25 cup <a href="/NLPYVN22">Olive Oil</a>
- 0 pinch of crushed <a href="/ZFRS3GMM">red pepper </a>
- 0 * <a href="/SJXC4CCC">Substitute </a>8 oz <a href="/N6LTBHBT">frozen corn </a>- thawed if fresh is unavailable
Instructions
Step 1
<a href="/8BSVY4LZ">Wash </a>& <a href="/RF7SRX43">dry </a>fresh spinach. <a href="/XZBDDD5G">Cut </a>fresh corn off cobs (discard cobs). Place the first 5 ingredients in a large <a href="/Y6MVNCHX">serving </a>bowl.
Step 2
<a href="/7CGY8RP7">Dressing: </a>Combine white balsamic vinegar, olive oil and <a href="/LTSH5D6W">crushed </a>red pepper in a small jar or bowl and <a href="/7S3QCKWK">mix </a>well.
Step 3
Pour the <a href="/7CGY8RP7">dressing </a>on the salad and toss before <a href="/Y6MVNCHX">serving.</a>
