- 2 large ripe bananas
- 4 eggs
- 160 grams almond flour
- 1/2 teaspoons cinnamon powder
- 1/2 teaspoons baking powder or bicarbonate of soda(optional)
- 1 teaspoons vanilla extract
- 250 milliliters honey or maple syrup(optional)
- 25 milliliters coconut cream
- 30 milliliters coconut oil
- 2 teaspoons vanilla extract
- salt

Step 1
For the Pancakes

Whisk eggs in a bowl.
Step 3
Mash bananas in separate bowl.
Step 4
Combine all ingredients, to form the pancake batter.
Step 5
Brush a tablespoon of coconut oil onto a non-stick pan.
Step 6
Ladle about a third of a cup of batter into the pan.
Step 7
Cook until bubbles start to form on the surface of the batter.
Step 8
Flip to cook the other side.
Step 9
Top with slices of fresh banana and caramel sauce.

For the Caramel

Melt coconut oil in a saucepan.
Step 12
Whisk in honey/maple syrup, vanilla, and coconut cream.

Cook for about 3 minutes over medium heat stirring constantly. Consistency should easily coat the back of a spoon.
