Oriental Tapioca From Heaven
This recipe was given to my mother by one of her best friends who was born in China, her family owns several restaurants Maracaibo, Venezuela. This is such a delightful recipe, not too sweet and just awesome and untraditional!! Thank you to Margarita for the great recipe!!

- 1 pound bag of small <a href="/KNYTKVKX">tapioca </a>(Oriental or <a href="/5JZN2JDN">Indian </a>markets have them)
- 4 cup of <a href="/PXTR53Z5">water</a>
- 2 cup or more <a href="/6H6G87VP">sugar</a>
- 2.5 cup finely chopped toasted <a href="/Y6WY7GBW">peanuts</a>
- 2.5 cup finely shredded cocunut not toasted
Instructions
Step 1
Bring water to a <a href="/W7VKDJHH">boil </a>and add the sugar until it <a href="/PXKXVQTM">dissolves,</a> add the tapioca and lower <a href="/XZFHRHHF">heat,</a> cooking and <a href="/DRM2WPZ4">stirring </a>constantly until tapioca achieves it's gelatin like consistency, remove from <a href="/XZFHRHHF">heat.</a>
Step 2
In an oval or square medium size pyrex <a href="/QQVZX64Y">dish </a>spread a layer of the tapioca followed with a layer of cocunut, layer of tapioca, layer of peanuts ending on a layer of peanuts.
Step 3
Place in the refrigerator for an hour or more until it is set. <a href="/Y6MVNCHX">Serve </a>cold.
