  • 1/2 tablespoons unsalted butter
  • 1 unit small onion, peeled and thinly sliced
  • 3/4 pounds diced ripe tomatoes
  • 1 unit bay leaf
  • 1/8 cup prepared horseradish
  • 1 pinch coarse sea salt
  • 1/2 teaspoons Herbs de Provence

Instructions

Step 1

Melt butter in a large skillet over medium-high heat.

Add onions and stir until they become translucent.

Add tomatoes, bay leaf, and horseradish.

20 minutes

Stir, reduce heat to medium-low, and cook until tomatoes are tender.

Add salt and Herbs de Provence.

Simmer.

Cool and transfer to serving dishes or storage containers.
