- 3 pounds spare ribs
- 1/2 teaspoons black pepper
- 1 teaspoons Jamaican curry powder
- 1 teaspoons brown sugar

Combine the cumin, salt, ground cloves, cinnamon, ground turmeric, black pepper, Jamaican curry powder, and brown sugar in a small bowl and mix well to create the dry rub.

Rub the spare ribs thoroughly with the prepared dry rub. Place the rubbed ribs in a zip-lock bag or a covered bowl and refrigerate overnight.

Preheat the oven to 350°F.

Place the ribs in a baking pan. Cover the pan tightly with aluminum foil and bake for approximately 2 hours without disturbing them.
