Peanut Butter and Banana Bars

I threw this together last night while trying to figure out what to do with some over-ripe bananas. I already have a few in the freezer and didn't want to stockpile too many but wanted to try a bar rather than my usual banana bread, muffins, etc. As it turned out, I had a bag of Reese's Peanut Butter Chips in the pantry, so I used half chocolate and half peanut butter for these.

Ingredients

  • 3 very ripe bananas
  • 0.25 cup canola oil
  • 2 eggs
  • 2 teaspoon vanilla
  • 0.5 cup light brown sugar
  • 0.5 cup Jif Peanut Butter
  • 2 cup flour
  • 1 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.5 cup chocolate chips

Preheat oven to 375

Spray 9x12 baking pan with baking spray

Mash bananas in a medium bowl

Add oil, eggs, vanilla, brown sugar, and peanut butter to bananas

In separate bowl, whisk dry ingredients with a fork

Mix wet ingredients into dry ingredients

Stir in chips

Pout into prepared pan and back 20-25" until toothpick tests clean
