  • 1/2 unit Roma tomato
  • 1/2 unit Avocado
  • Goat Cheese
  • to taste Salt and Pepper(optional)
  • Fresh Basil
  • 1 1/2 cups Egg Whites
  • 16 pieces Turkey Bacon

Instructions

Step 1

Preheat oven to 350°F.

1-2 minutes per side

Cook bacon on an oiled or cooking-sprayed griddle over medium-high heat for 1-2 minutes on each side, just enough to cook but not crisp.

Remove bacon from the griddle and set aside.

Spray mini muffin cups with oil or cooking spray.

Line each muffin cup with one piece of bacon, wrapping it around completely.

In a small bowl, whisk the egg whites, then stir in the diced Roma tomato and avocado.

Slowly pour the egg mixture into each bacon-lined muffin cup.

Top with goat cheese crumbles.

Bake for 15 minutes or until the egg bouquets have set.
